Recipe of the Week: Cucumber Fruit Salad

Here's a cool, tasty summer salad for that hot day.

 

The hot weather is here, and what better way to cool down than with this unique salad?

I found this receipe for Cucumber Fruit Salad on AllRecipes.com, and it sounds like a simple sidedish that could be thrown together on a warm spring day.

These ingredients would be easy to change up, too, so you could start with this recipe and build your own favorite spring salad!

Here's what you need:

  • 1 medium cucumber, peeled, seeded, and diced
  • 1 medium tart apple, chopped
  • 1 cup halved green grapes
  • 1 cup halved seedless red grapes
  • 1/2 cup sour cream
  • 1 tablespoon sugar
  • 1 tablespoon minced fresh parsley
  • 1/3 cup chopped walnuts

Here's what you do:

In a bowl, combine the cucumber, apple and grapes. In a small bowl, combine the sour cream, sugar and parsley. Pour over cucumber mixture and toss to coat. Stir in walnuts if desired. Serve immediately.
